Nanban chicken with blackcurrant mustard

Serves 4
2 pieces of Chicken breasts
½ red onion
1 tbs of sake
1.5 tbs of Blackcurrant mustard
ir mustard
Starch
Frying oil
45g of sugar (A)
5g of salt (A)
¼ cup of rice vinegar (A)
½ tbs of soy sauce
Salt & pepper

Step 1

Remove the skin from the chicken breast and cut it into 1 cm thick pieces. Sprinkle with sake, salt and pepper and leave for 10 minutes.

Step 2

Cut the red onions into thin slices along the fiber and quickly soak them in water. Drain them well.

Step 3

Prepare Nanban pickled sauce. Combine ingredients (A) in a small pot and heat over low heat. When the sugar has melted, remove it from the heat and let it cool. When cool, combine the blackcurrant mustard and soy sauce and transfer to a bowl.

Step 4

Sprinkle potato starch on the chicken meat of 1 and remove the extra powder. 

Step 5

Heat the oil to 170 ° C to 180 ° C, fry the chicken, and soak it in the sauce. 

Step 6

Serve the chicken with rice.
